Bitter melon Omelette with soy Sauce fried Rice and Chicken and spinach sausage
One of my favorite vegetables is bitter melon. It can be prepared in a variety of ways, and when I got here in US, I have learned more ways of preparing bitter melon from other cuisines such as Indian, Vietnamese and Chinese. However, my favorite preparation of bitter melon is still the same bitter melon omelette that my late mom used to make for us.
The omelette is prepared by slicing the bittermelon into very thin pieces. It is sauteed with caramelized onion and garlic, and when the bitter melon is cooked, we add well beaten egg to cover the bittermelon. We leave the bitter melon- agg mixture in the pan until the egg is cooked. The result looks like in the above picture.
The meal in the above picture was actually my dinner. Talk about being in Facebook, despite I just had my dinner, I saw someone posted in her wall garlic fried rice with sunny side up egg, and I felt like eating again too. Before I knew it, I made sunny side up egg, and had my 2nd dinner tonight!
Now, I wonder if Facebook does me good at all! haha, it seems every minute I am in Facebook, there is always a food picture, and my appetite always say, "yes, yes, yes! I wanna have some too!" Despite my stomach probably says, "please don't feed me anymore, I can hardly breathe now from what you just had eaten!", yet, I very seldom listen to my stomach, instead, I let my eyes and my excessive appetite win!!
That is why, I try my best not to complain about gaining weight, as I have no one to blame but myself!! Now, blame it on me, if you end up making fried egg too and garlic fried rice! Oh don't forget, add bitter melon too!!
