An Ode to Happiness

I am a free spirit, beautiful and warm.
I will thrust to the horizon with a zestful attitude.
I will greet anyone with a caring smile.
I will tease around playful souls.
I will be a shelter for those who’ve lost their way home.
I will dance to the rhythm of my heartbeat.
I will sing my soulful longings, joys and pains.
I will embrace him who would long for me.
I will kiss with a fire-like consuming.
I will snatch back my laughter in midst of trouble.
I will let tears fall like rain.
I will hold tight to the unseen hand that is always there.
I will travel on to this journey brave and bold.
Here and now,
I will breath-in life like it is my most precious gift.
I will glorify The source of all my inspirations…
by giving my best shot ...
by quietly walking my path
by graciously sharing to the world
all of me…

Nerium Oleander

Oleander is a versatile plant. It can be a huge shrub or a small tree depending on how you want to design it in your yard. It can grow to 2-6 meters tall. It comes in lots of shades -red, purple, orange, white pink (dark and light) and peach.   The variety of pinks are the most common.

Oleander thrives well in warmer climates, and is frequently used as an ornamental plant in parks and along the road.  Despite loving the warm subtropical regions, oleander has proven hardy and can tolerate mild frost down to -10C. It is a favorite among landscape artists and gardeners because oleander flowers are showy and fragrant. The flowers also serve well as cuttings because with clean water in a vase, the blooms stay fresh  for a long period of time. Also it is easy to care for and grow oleander because it is a low-maintenance plant. It can tolerate almost any type of soil and it is drought tolerant too. In cooler climates, oleander can be trained  to thrive and bloom indoors. With  proper care, your oleander will grace any type of yard for a long time.

The Joy of Blue

I must admit I have not really looked into the depth of blue color before. Though I appreciated blue because it meant beautiful sky and most probably nice weather, but I haven't really taken a deeper look at the joy and the peacefulness that sets in the heart the blue color brings.

 However, since meeting the TSS sisters, we found out almost each one of us have different color of happiness, and it is then I started looking at other colors, color other than, well, pink :( I must admit it added a lot of joy seeing the different colors of friendship each time I explore outdoors. This post is dedicated to Zen, of The Letters In November, who opened my eyes and heart to the excitement of BLUE!!

( I had to patiently wait for this butterfly to spread its wings, otherwise its wings are always folded which shows the color of the other side, which is brown. It is just as beautiful when it is blue as it is brown.)

( when my hubby saw this flower, he asked me, "is it real?" And I told him, "Yeah, we had so much of that in the Philippines!" Then, I saw that the color is blue, so I had to stop and snap this shot because of blue, when before I would probably not take a second look because of the thought that this is very common back home. )

Now, whenever I see blue, I see someone's face beaming with happiness, just as I too am enveloped with happiness because of blue! Thanks again to Zen for making me feel the happy color in blue.

Pancit

Pancit with Crispy Dried Calamari and Silver Anchovy in Black Beans
Pancit in Filipino refers to any type of noodles. In fact, we have different varieties of pancit recipes. Pancit is a dish that is so easy to prepare. In fact, I prepare it in so many ways. For the pancit pictured above, here is the way I prepared it: 

Egg Noodles - blanch egg noodles, drain, and then, stir fry in lots of garlic. 

Vegetable Toppings- Sautee vegetables, any vegetables is compatible with pancit, though oftentimes you will see bokchoy, carrots, celery, green beans, and mushrooms with it. Season the vegetables with soy sauce, a little bit of vegetarian stir fry sauce, salt, pepper, and lime juice to taste. 

Anchovy with Chilli and Black Beans - Pan fry anchovies, add a little bit of chilli sauce and salted black beans after frying.

Fried Squid- well, just fry it and dip in spicy vinegar.

Lime - well, I freshly picked that one from our yard :) I love this time of the year when citrus fruits are abundant and I put a lot of lime in my green tea :) and in almost any dish. 

How to serve: Put pancit on the plate, then, top it with vegetables. Serve on the side your choice of meat or sea food, which in this case, I used squid and anchovies. Squid and anchovies are not the norms for pancit, however, it just so happened that on this day I made pancit I had it with squid and anchovies. Here at home, we mostly eat vegetables and fruits. Not only are vegetables the tastiest foods on Earth, they are also healthy and the easiest to prepare for me. There are times though that I crave for sea foods, and I had to give in to my cravings once a while. Two days ago, the moment I got home, I knew I had to have my "pusit" or dried squid or dried calamari, otherwise, I will be so depress if I will not cave in to my cravings. The anchovies in the above picture was actually a left-over from my previous meal. Usually, I love to have my dried squid and anchovy with rice, but in the above picture, I had it with pancit. Whenever I have seafoods which my hubby can not eat, I feel guilty of serving him rice and vegetables only. so I prepareD something fancier so he will not feel tempted to get my squid :) So, I made pancit for him and vegetable "okoy" or fritter. And since I did not want to cook a separate rice for myself, I decided to eat my squid and anchovies with pancit, which as I found out, actually is also very good and yummy!

Now, I am craving for avocado smoothie :) Another yum!!

the book....



through pages of life i have gone
volumes of memories,verses of pines
few chapters i’d say are better than some
those i finished, result of perseverance

lines in the sun,blissful, blessed ones
i play by day and dance on moonlight shine
i dreamt of dreams and sing my happy song
stardust on my hair and a rainbow in my soul

several episodes are blue as blue can be
yet those hours has made what i am me
in life i learned nothing remains the same
it is tough, but at the end its worth the bout

when i find myself on top of the world
i'd recall the passage which explains it all
it keeps my feet anchored on solid ground
weathered by adversity,bowed in humility

again, in this life i chance upon to tread
bespoke feelings of joy and sorrow poesy
stack of sheets in this book rather misunderstood
on my lips a smile and my eyes a knowing look..
