Cream of mushroom:5 cups sliced mushroom
1 cup chicken broth
1 small onion chopped
2 pcs garlic
Saute' garlic, onion, mushroom. Pour the chicken broth. Cook for 15 minutes. Keep cool for a few minutes. Set aside 1 cup and pour the rest in a processor or blender.
Butter
3 tbs flour
1 cup milk
In a saucepan, melt butter, whisk in the flour until smooth. Add a little bit of salt and pepper, add milk and add the blended mushroom and the cup of mushroom. Boil. Add a little bit of thyme. There you go !

aside from carrot and coriander soup, mushroom is my second favorite.a shame that i don't know how to make one from scratch and the hubby and little one are not the soupy types. but, me...ha!ha!ha!like our sunshine dear chay, serve with baguette and butter on side...a perfect meal!
